Easy breezy raw mango pudding

Since this is the very fist raw recipe, I decided to give you something simple yet delicious!
For this, you will need:
- 1 1/2 cups fresh mango
- 2 hand fulls of dried mango
- a teaspoon of ground vanilla (yum!)
- fresh coconut meat ( I like to buy fresh thai coconuts, drink the juice,  and then scoop out the meat from 2 coconuts)
-  a pinch of sea salt
- blueberries
- some water
…. and IF you like extra sweetness
- 3 pitted dated
okay so let’s get started! …
Soak the dry mango in a bowl of water for 10 minutes to soften. Meanwhile, in a blender (I like vitamix or a food processor the best, but if you don’t have one then a regular blender will do) add the fresh mango. Add the dates if you want the extra sweetness. MIX! Then add the soaked dry mango to the mix. MIX! Scoop out and set aside.
Now put in the fresh coconut meat, the vanilla, pinch of sea salt (brings out the sweetness), and about 1/4 cup water. You can always just add more water if needed while mixing. NOW MIX!
Watch how this turns into a beautiful fluffy creamy topping. mmmm
Scoop into a bowl, first, the mango pudding, topped with the coconut cream and a few fresh blueberries! enjoy :)
This makes about 2 servings and can be eaten as breakfast or dessert. And don’t forget about baby - this makes perfect baby food!
So energizing, deliciously satisfying, and guilt free!
